BURGERS smash and pub styles

Two burger favorites go head to head: a thick, juicy pub burger and a crispy edged smash burger.

Serves 2

INGREDIENTS

1 # 80/20 ground beef

2 onions

2 med tomatoes

1 small head of lettuce

2 tbl Beef tallow

Potato buns



BURGER SAUCE


2 tbl dill pickles, chopped

1 tsp soy sauce

2 tbl mayo ( I like Kewpie)

3 dash of hot sauce

1 tbl POP mustard of your choice

DIRECTIONS
  1. If making pub burgers weigh out to 4oz pattys, if making smash burgers weigh out 4-4oz pattys

  2. Chop the onion into a medium dice, press into the burgers and grill on the hot side of the grill. Cooking 2-4 minutes per side depending on how you like them done. Spread the beef tallow on the burger buns and toast on the grill. Assemble the burgers by placing sauce on both buns. Place the burger, tomato, and chopped lettuce on the buns.

  3. For the sauce mix all the ingredients in a bowl and let rest for 5 minutes to incorporate the flavors.

PAPER PLANE
  • 4 oz Amaro

  • 4 oz Bourbon

  • 4 oz lemon juice

  • 4 oz Aperol

  • Mix all and serve over ice.
