

HALLOUMI with STRAWBERRIES and STRAWBERRY MARTINI

Seared halloumi topped with warm strawberries, pistachios, mint, honey, and black pepper.

Serves 4
INGREDIENTS
1 block of halloumi cheese
12 oz of fresh strawberries
¼ c white wine (we use Pinot Gris)
¼ c toasted pistachios
2 tbl red wine vinegar
4 tbl honey
4 tbl evoo
1 small bunch mint
Salt and pepper
DIRECTIONS
Slice the cheese into ¼” thick slices. Lightly oil the cheese and grill over high heat.
Place the strawberries, white wine, and pistachios in a pot and warm over med high heat.
While the strawberries are warming mix the red wine vinegar, honey and mint in a mixing bowl. Drizzle in the evoo to make a dressing, season to taste.
Place the cheese on a plate, top with the warm strawberries and drizzle with the dressing. Top with more mint and serve.

For simple syrup
1 c water
1 c sugar
1 c strawberries
6 oz Gin or Vodka of your choice
