HALLOUMI with STRAWBERRIES and STRAWBERRY MARTINI

Seared halloumi topped with warm strawberries, pistachios, mint, honey, and black pepper.

Serves 4

INGREDIENTS
  • 1 block of halloumi cheese

  • 12 oz of fresh strawberries

  • ¼ c white wine (we use Pinot Gris)

  • ¼ c toasted pistachios

  • 2 tbl red wine vinegar

  • 4 tbl honey

  • 4 tbl evoo

  • 1 small bunch mint

  • Salt and pepper

DIRECTIONS
  1. Slice the cheese into ¼” thick slices. Lightly oil the cheese and grill over high heat.

  2. Place the strawberries, white wine, and pistachios in a pot and warm over med high heat.

  3. While the strawberries are warming mix the red wine vinegar, honey and mint in a mixing bowl. Drizzle in the evoo to make a dressing, season to taste.

  4. Place the cheese on a plate, top with the warm strawberries and drizzle with the dressing. Top with more mint and serve.

STRAWBERRY MARTINI

For simple syrup

  • 1 c water

  • 1 c sugar


  • 1 c strawberries

  • 6 oz Gin or Vodka of your choice
